Mietta's Review
The biggest, bustlingest, brassiest bar in all Sydney. The hugely expensive fit-out provides a range of spaces and situations ranging from a vast cavern on George filled with excited drinkers moving and shaking, through the little courtyard to the back bar with separate entrance. There is also a nightclub, restaurants, ballrooms and bedrooms. Fun if you can take it. The highly ranked restaurant est. is upstairs.

Gourmet Traveller 2012 Australian Restaurant Guide Score: Three Stars "In one of the most elegant rooms in Sydney, drinking deeply from a wine list equalled by only a handful of rivals in the state, in the care of one of the most thoroughly professional and well-drilled service teams in the nation, it's perhaps not that much of a surprise to find great food"

Gourmet Traveller 2011 Australian Restaurant Guide Score: *** "It's not often you get to use the word "swoop" when talking about restaurants, but it's really the best word to describe the choreographed manner in which Est. 's peerless floor team appears and drops a table's worth of plates onto the crisp ironed linen"

Gourmet Traveller 2010 Australian Restaurant Guide Score: *** "The socialite zoo/social experiment that is George Street's Ivy complex may have grabbed everyone's attention, but Est. is still the jewel in the crown of restaurants owned by the Hemmes dynasty"
