Cindy and Theirry Clercs late of Le Bressan in the Brisbane suburb of Stafford have taken over the Flaxton Inn in the Noosa hinterland and converted it to a French inn, Le Relais Bressan. Though both of them are chefs these days Cindy (an Australian) cooks most of the traditional French bistro dishes. There are excellent views of the rolling hills around Monteville from the decking they added. In 06 mains averaged $24.
