Captain Buddy's Peppery Hush Puppies



Ingredients

4 cups sifted Stone Ground Cornmeal

Cornmeal Cornmeal

2 cups sifted SR Flour

Cornflour Cornflour

1 tablespoon Baking Powder

Baking Powder Baking Powder

1 1/2 teaspoons Salt

Salt Salt

1/2 teaspoon Baking Soda

Baking Soda Baking Soda

2-2 1/2 cups Beer or Milk

Beer Beer

1 medium Onion finely minced

Spring Onion Spring Onion

1 Egg

1/4 cup chopped Parsley

Parsley Parsley

1 1/2 teaspoons Pepper

Pepper Pepper

Method

Sift cornmeal, flour, baking powder, salt and soda into a large bowl. Make a well, add 2 cups beer, onion, egg, parsley and pepper. Stir until just combined. Add remaining beer if too thick. Deep fry rounded teaspoons of mixture at 365 degrees F for about 2 minutes on each side.

(Yellow stone ground cornmeal can be bought in Health Food Shops or I have found Polenta a good substitute.)

Savoury, deep-fried beer batter
