Stuffed Kumquats and Litchi Nuts



Ingredients

8 oz Cream Cheese

3 tablespoons chopped Nuts (walnuts, pecans, macadamias)

1 x 20 oz can Litchi Nuts drained

1 x 16 oz jar preserved whole Kumquats (or about 25 fresh kumquats)

Method

Place cream cheese in bowl; add salt, sherry, and nuts, creaming together well. Stuff each litchi nut with about 1 teaspoon filling. Slice kumquats in half, remove seeds, and sandwich the halves together after placing about 1 teaspoon of filling mixture in each one.
