Brandied Marzipan Dates
Preamble
"Dates have never tasted so good. Buy dessert dates and carefully remove seeds, slitting them on one side with the point of a sharp knife. Fill dates with brandied marzipan coloured pink, green and white and pack into a sweet dish arranged on a pretty glass plate. Cover tightly with plastic wrap before gift-wrapping."
Ingredients
4 oz Ground Almonds
8 oz pure Icing Sugar
2 tablespoons Brandy
Egg Yolk
3 drops Almond Essence
Method
Sift icing sugar into a large bowl, stir in ground almonds. Mix brandy, egg yolk and almond essence, add and knead until well mixed and smooth. It may be necessary to add a little more brandy. The consistency of the marzipan should be soft and pliable. Divide mixture into three portions and colour one pale pink, and another pale green with food colouring. Leave remaining portion plain. Form marzipan into pieces the shape of a shelled almond and slightly larger, insert in dates, mould smoothly and arrange on a plate. If liked, roll in castor sugar.
