Ingredients
1 oz Butter
1 medium Onion chopped
2 oz chopped Walnuts
4 oz fresh Breadcrumbs
1 teaspoon chopped Parsley
1 teaspoon Sage
1 teaspoon Thyme or Marjoram
1/2 teaspoon Cinnamon
Salt And Pepper
1 beaten Egg
Juice of 1 Lemon or Orange
Method
Melt butter, add onion and cook until soft but not browned.
Add walnuts and fry until browned.
Mix these in with the rest of the ingredients.
Stuff duck and truss well.
Roast duck as usual, but first rub skin with a little butter and 2 teaspoons of honey.
