Classic Australian Beetroot
Ingredients
1 bunch Beetroot roasted peeled and sliced
250 ml vinegar
250 ml water
salt
Method
Roast the beetroot until soft - at least an hour in a hot oven (you can speed this up with a microwave), strip off the skins when the beetroot are cool enough to handle and slice them
Add a little salt to the vinegar, add the beetroot and mix thoroughly. Regulate the degree of acidity by adding water
Admire the colour of your hands while allowing the dish to stand for an hour or two. Serve at room temperature.
Remarks
The vinegar is important in this dish. Experiment until you find one you like. Break the acidity of vinegar down with water until the natural sweetness of the beetroot comes through.
