Cooked Tomato and Onion

Ingredients
4 ripe Tomatoes peeled and cut into chunks
1 Brown Onion sliced
splash olive oil
salt
freshly ground black pepper

Method

Peel and chop the tomatoes. To peel tomatoes cut out the core and cut a cross in the base, drop into boiling water for 20 or 30 seconds (the riper the tomato the less time it takes). Start peeling from the cross. If the skin doesn't come off easily briefly put the tomato back in the boiling water.

Cook the onion slices in a generous splash of oil until soft. Do not allow them to colour.

Add the tomato, salt it and toss for about a minute. Just warm the tomato and let it mix with the oil and onion. You want it still firm and with the taste of fresh tomato still intact.

Serve hot or at room temperature.

Remarks
This can be eaten either as a salad or a vegetable side-dish. To stop it becoming too sloppy you can se-seed the tomatoes - cut the tomato acrosswise and squeeze the halves to get rid of the pips and juice.
