Flat Beans Braised in Olive Oil

Ingredients
500 gm flat beans
50 ml olive oil
salt
freshly ground black pepper

Method

Run a potato peeler down the edges of the beans to remove the string.

Put a little water and the olive oil in a saucepan. Add the beans, cover and stew gently for 15 minutes, turning them over occasionally. Season with salt and freshly ground black pepper. Allow to cool and serve.

Flat beans are a wide green bean found in Middle Eastern greengrocers
