Ingredients
4 carrots julienned or grated
1 or 2 lemons juiced
handfull flat leaf parsley chopped
olive oil to taste preferably lighter than extra virgin
salt
Method
Make a vinaigrette by mixing the lemon, oil and salt and beating with a fork until emulsified
Add the carrot, mix thoroughly and leave stand to allow the flavours to blend.
