Pasta Salad with Tomato and Basil

Ingredients
3 ripe tomatoes finely chopped
150 gms Riso Pasta
handfull fresh basil leaves torn
20 ml extra virgin olive oil
salt
freshly ground black pepper

Method

First chop the tomatoes into a fine dice - an extra sharp knife will help. Add freshly torn basil leaves, salt and ground black pepper. Mix well and allow to stand for at least an hour to allow the flavour of the basil to permiate the tomato.

Cook the rice shaped pasta in plenty of fast boiling water. Drain (not too thoroughly) and allow to cool a little.

Stir the tomato through the pasta.

Serve at room temperature or warmer

Remarks
You need enough oil to thoroughly coat the pasta. The texture should be quite slippery. This is a dish that's very east to eat.
