MethodPlace mashed potatoes in a basin and add sugar. Beat until creamy and add mixed fruit. Add sifted flour alternately with milk. Place in 2 well greased 7 inch sandwich tins and bake in a moderate oven for about 30 minutes. When cold, ice with vanilla icing and sprinkle with coconut.
